
Chili-Fermentations-Workshop 1/2
Adrian will be hosting a pepper fermentation / hotsauce workshop in the garden in the upcoming weeks. The workshop will take place over two sessions. On Friday, Sept. 3rd starting at 16:00 we will have the first session. There we will talk about how fermentation works (yay theory!), different methods / techniques to achieve natural fermentations, healthy vs unhealthy things to look out for, and so on. Of course, we will alsop repare our own fermentations 🙂 I am hoping that by Sept. 3rd we’ve got some nice ripe spitzpaprika in the garden, but we will play it by ear and see what is ready. I have also ordered ~5kg of fresh peppers from a local producer (chilibaron.ch) and with that we should have a nice mix from mild, to medium, to stupidly spicy peppers. With pepper sauces it is often nice to additionally ferment some garlic cloves, and fruits, so I will bring along some additional options. Don’t worry if you don’t like spice! We can also ferment sweet peppers and make some super delicious sauces that have little to no heat at all.
We will leave the peppers to ferment, and then on Monday, Sept. 13th at 16:00 we will have the second workshop. We will check the fermentations, discuss shelf stability, play with litmus papers, and process the peppers into sauces (there are lots of options here depending on what style of sauce you want). At this point we can also fine-tune flavours by blending in fresh fruits, herbs, juices, or fresh hot peppers (if you want more heat).
We will also fine-tune the acidity with some vinegars to make sure the final product is shelf-stable. As a bonus for the second workshop, we can taste our lovely sauces and talk about what to do when you eat too much spicy food 😉
For the first workshop all you need to bring is a 1L glass mason jar for the fermentation, and for the second workshop you will need to bring your own smaller glass jars or bottles to store the final product. We will do everything without specialized equipment so that you can learn how to make your own sauces in your own kitchen afterwards (with common tools). Other than your own glassware, I will take care of organizing all equipment and ingredients for both workshops.
